The goal of Lavender Fields is to create a farm that works for the environment and the welfare of the creatures that inhabit it. By working with the land, climate, and animals, we are able to create an atmosphere that is comfortable, thriving, and supports long term ecological balance. Not just an equestrian facility, Lavender Fields is creating a working farm. On 5 acres located in Granite Bay, the farm will be a working equestrian facility, lavender farm, chicken breeding and fresh eggs, honey, chef’s garden, and more. By embracing the Northern California lifestyle, and working with nature, we are able to create our own space. This magazine is a record of our journey. BARNSeatingPeople love to watch their horse, kids, or signicant other ride. Also, sometimes your trainer needs a vantage point...or just a moment to sit down. Here are some reasons why you may want to add arena seating to your facility.1. Comfort: Proper seating provides comfort to spectators, allowing them to enjoy the view.2. Visibility: Good seating ensures that all spectators have a clear view of the arena. 3. Safety: Proper seating ensures that spectators and horses are safe. This includes appropriate and safe seating that a horse, if loose, won’t hurt itself.4. Atmosphere: Seating also plays a role in creating a lively and engaging atmosphere during work. BARNChoresAt Lavender Fields, we feed high quality hay pellets. We weigh every meal and know exactly how much, pound for pound, each horse is eating. For us, hay pellets have been an eective way to provide horses with essential ber and nutrition. Need more information- read on:1. Convenience: Hay pellets are easier to store, handle, and trans-port than traditional hay bales. The bags take up less space, and can cost less pound per pound than hay.2. FARM GardenJune is a great time to plant your veggies for summer harvest. Here are some options:• Tomatoes: Choose from a variety of tomato types such as cherry, beefsteak, and heirloom.• Peppers: Bell peppers, jalapeños, and other hot peppers will thrive in the warmth.• Cucumbers: Cucumbers love warm weather and do well.• Squash: Summer squash and zucchini are fast-growing and pro-duce an abundant harvest.• Green Beans: Choose from bush or pole varieties.• Okra: It loves the hot weather and will produce a bountiful har-vest.• Melons: Melons such as cantaloupe, watermelon, and honeydew are great choices.Remember to check your soil conditions and prepare the soil proper-ly before planting. FARMFlowersThe wildower season in California can vary depending on weather. This year, the frost lasted unseasonably long. The display lasts until early summer. I try to let the poppies last as long as possible by not weedeating until things start to turn brown. The plan at Lavender Fields is to use California Poppies as a cover crop with the lavender. Based on blooming seasons, the Poppies will be in full display starting in February, with the Lavender blooming in June. Should make for a beautiful display.What’s blooming?!

FARMChickensAyam Cemani is a rare breed of chicken that is famous for its all-black appearance, including feathers, skin, beak, and internal organs. This breed is highly valued for its unique and exotic appearance, and is considered sacred in Indonesian culture. Ayam Cemani is also known for its hardiness and adaptability, making it a popular choice for backyard chicken keepers. However, due to its rarity, and di-culty to hatch, the breed is quite expensive and may not be readily available.We were lucky and able to hatch 8 Ayam Cemani chicks, resulting in two roosters and 6 hens. This will be our rst generation of birds. We are focusing on the quality of the bird and the ourescens of the feathers to reect more purple. So far, they are quite stunning.Next step, acquire a dierent hereditary line of Cemani’s in order to create generation two. Stay tuned for the progress.Introducing Ayam Cemani.

HOME FoodINGREDIENTS:• 2 tbsp. extra-virgin olive oil, plus more for grill• 1 clove garlic, grated• 1 tsp. nely grated lime zest• 1 tbsp. fresh lime juice• 1 tsp. dried oregano• 1 tsp. kosher salt• 1/4 tsp. freshly ground black pepper• Pinch of red pepper akes• 2 avocados, pitted and quartered lengthwise (skin on)• Fresh cilantro, aky sea salt, and lime wedges, for servingDIRECTIONS:1. Prepare a grill for high heat; clean and oil grates. In a small bowl, whisk oil, garlic, lime zest, lime juice, oregano, kosher salt, black pepper, and red pepper akes.2. Lightly drizzle avocados with oil. Grill, turning once, until char marks are visible on esh side and avocados have slightly soft-ened, about 2 minutes per side. 3. Scoop out avocado and transfer to a plate, smash on toast, or serve on salad. Whisk vinaigrette again, then drizzle over avoca-dos. Garnish with sea salt and cilantro. HOMEDrinkINGREDIENTS:• 4 green-tea bags• 1 ½ teaspoons fresh lavender blossoms or 3/4 tsp. dried lavender• Lavender sprigs (optional)DIRECTIONS:1. Heat 1 qt. water in a medium saucepan until it just begins to sim-mer. Remove from heat and add tea and lavender.2. Steep for 5 minutes. Strain into a heatproof pitcher or bowl. Let cool.3.
